Fried Egg Tacos

Fried Egg Tacos are an easy, healthy meal for breakfast, lunch, or post-workout—packed with protein and tons of flavor!

You all know I get pretty psyched when my monthly Degustabox arrives. This fun food subscription box always has a great variety of ingredients and snacks. You may have seen my haul when I posted it on Instagram...

I decided to use the Goya tortillas and pico de gallo from my Degustabox for this super easy, super healthy post-workout meal: Fried Egg Tacos! This was an incredibly delicious and filling meal—there's lots of protein, tons of flavor, and it only took a few minutes to pull together.

  • warm tortilla
  • 1 to 2 Tablespoons plain Greek yogurt
  • fried egg
  • 1 to 2 teaspoons pico de gallo
  • 1/4 avocado, sliced
  • chopped scallions

Spread the Greek yogurt on the warm tortilla, then top with the other ingredients. It's a bit messy to eat but who cares? You can just lick those fingers clean like I did. YUM.
